辅料:四季豆、藕片(或银耳)、料酒、淀粉、蒜茸、盐、食用油
烹饪方法:
1、虾仁自然解冻,四季豆洗净备用;
2、虾仁用沸水稍微焯一下,捞出后用少许料酒腌渍;
3、将锅烧热,倒入食用油,加入蒜茸,爆香后放入虾仁、四季豆和藕片(或银耳)翻炒;
4、翻炒30秒至四季豆断生,加少许盐,用淀粉勾芡,出锅即可。
虾仁也可做软炸虾仁、青瓜炒虾仁。
